Healthy Twist on a Classic Favorite Dip

It's football season and dips are back! The bad part about dips - they can be full of fat and calories. Oh but they are soo yummy!

My weakness, downfall and guilty pleasure is dips! I love dips and I can't help it! Especially a really yummy dip, but heck Chips and salsa is one that I can't keep my hands out of so I think it's just all dips for me.

Well it was tailgating again this Sunday and I needed a new dip. I wanted something easy, cheap but most importantly tasty. I knew I had some low-fat sour cream left and a packet of Lipton' Onion Soup Mix and wondered if I bought some non-fat Greek plain yogurt and mixed that in would it work? A low-fat onion dip, could it be possible?

Saturday night I whipped it up, figured it would need a few hours to set up with the yogurt and over night would be perfect - it allows me to swing by the store in the morning if it was a flop. What turned out was amazing and honestly you couldn't tell it was low-fat at all! Maybe if the full fat was next to it and you tried them back to back, maybe. Delicious!

I was so proud of myself for putting this healthier twist on a classic and favorite dip. I definitely knew I had to share this recipe with you guys!


Healthier Twist on Onion Dip

Total Time:
Prep Time - 5 Minutes
Chilling Time - 3 hours minimum, overnight is best

Ingredients:
10.5 ounces plain non-fat Greek yogurt (2 small individual cups)
2/3 cup low-fat sour cream
1 packet Lipton's Onion Soup Mix
*You can add/subtract the sour cream/yogurt to your liking and I am sure it would come out just as yummy!

Directions:
1.) Pour all ingredients in a mixing bowl and mix until fully integrated together.
2.) Pour mixture into serving container & cover with lid or plastic wrap.
3.) Place in refrigerator for 3-8 hours.
4.) Serve and enjoy!

I served the dip with both plain low-fat Ruffles chips and Garden Salsa Sun Chips. I have to say the Garden Salsa chips are AMAZING! They aren't low-fat like the Ruffles but they are made with real corn and whole grains and have lower sodium than most chips, even some popcorn so they aren't too bad for you in regards to a chip.


Next football game- trust me this will be a crowd pleaser! ENJOY!

Grab a meal today to help out St. Jude's!

Every year I am a big supporter of this and try to promote it because I think it's a great cause and such an easy way to help out.

Found a GREAT fitness app - Gymboss

I found this great fitness app I just had to share!

From my last post you saw that my husband and I are joining forces to accomplish 2 common goals - lose weight and become healthier - YAY! We finally got out there last Friday and decided to start with a minute run and 30 second walk.  This is where the problem began and a wonderful solution was found.

I am in love with the Nike+ app when I run - seriously I am addicted but it's soo good so I see no problem with being addicted to an app. lol However it doesn't let you do intervals like I wanted it to do at this particular moment - only downfall of the Nike+ app that I have found thus far in over a year of using it.

Since we were all "suited-up" and ready to head out the door I did a very quick search in the app store for an interval training app and came across the Gymboss 2 Interval Trainer app. I quickly downloaded it and saw pre-set exercises but was able to set-up my own intervals.

The best part - I could run both my Nike+ app that I love and this new app Gymboss at the same time!

With Gymboss you can set multiple intervals for a workout. For example I am using 1 minute run and 30 seconds walk. I can name the intervals, assign it a color that appears on the whole screen when on that interval and also assign a noise (ding, buzzer, bells, etc). It's great!

Seriously this is a GREAT app! I know I have just begun using it so I am still figuring it all out, but thus far for a simple, user friendly interval training app I highly recommend!

Staying Happy Together in a New Way!

We are 5 months into our marriage and the pounds show it! We've been happy and its starting to show, okay really showing. Haha

Last weekend I was looking at running races in town and decided on a 1/2 marathon on December 29th. I am already signed up for a 1/2 on February 23rd but I wanted something sooner. What I've discovered is I have a hard time working out just to work out - I need something to train for. 

I took a long shot and simply asked my husband if he wanted to join me and run and train for a 1/2 marathon in December - it was a long shot because not only is he not a runner, he hates running too. I figured he would say no but thought what the heck. 

He said Sure right away! 

I had to ask him Really? twice to make sure I heard him correctly. He totally made my day by agreeing to do this with me. I haven't signed us up as I want to go to the local running shop to sign us up for the race instead of online.  

This past Friday we ran for the first time in months. I use the word running very loosely as it was a slow jog really. We did 3.15 miles but it was 1 minute run/jog, 30 seconds walk. I wanted to start with something that wouldn't be discouraging.  

Today our legs are heavy and tight - talk about being out of shape! Today I want to get back out there and go at it again. As my husband said the hardest part about running is starting. Isn't that the truth! 

We have 3 weeks to get ready and feel comfortable with 3 miles. We are going to follow the Hal Higon's 1/2 Marathon Novice 2 Training Program. It's a 12 week program, so back up 12 weeks from December 29th and the week of October 7th is our start date. It starts fast and you better be good with 3 miles so here we go. 

I'm happy we will be doing this together. We both need to lose weight and get back into shape and this is a great way to do it, especially together. Not to mention I feel better when I'm active and I know he does too so it will continue our happiness just in a new exciting way! :)

Remembering with an Untold Tale from 9/11

This morning when I woke up I couldn't believe the tragedies of 9/11 were 12 yeas ago! I know I am 1 of just about every American who was old enough to remember this that can tell you exactly where I was, what I was during and basically replay that entire day back in my head like it happened yesterday. Definitely our generation's Pearl Harbor and I hate saying that. I hope I never have to see another tragedy like this one again in my life time.

What came out from that horrible day was stories or courage, bravery, heroism, and just the American spirit of doing whatever they can for the person next to them!

I work in the maritime industry and last year my company played this video that I had never seen nor heard about - the boatlifts that helped evacuate half a million people from Manhattan. How had I never heard of this amazing story?! I remember being brought to tears, both sad because of the tragedy, but also moving and joyful tears to see how the American spirit shined so brightly that day. 

This morning an industry publication I get both in mail and email versions sent out the video: BOATLIFT - An untold Tale of 9/11 Resilience, the video I had seen a year ago for the 1st time. 

I knew the moment I saw it again that this would be my post today. I had to share this with as many people as I could, because now 12 years later there are so many people that have never heard this story.

Take Surveys and Get Rewarded

Ever wonder how you can get a magazine for free or even a gift card?

A friend of mine told me about www.e-rewards.com a while ago and how by taking surveys you earn cash to purchase rewards from their rewards store.


At first it sounded too good to be true - free money? Well then I thought about it and looked around their site. I am a marketing major and I know that companies develop surveys to test products, how consumers think, etc. They need this data for various reasons and are willing to pay to get the data. I remembered studying about companies that allow others to host their survey on their server to attract more people to take it. They pay the survey taker a small amount - $0.05  to as much as $35 (that I've seen), mostly around $4-7 for a full completed survey and a few cents to a $1.50 for a partial survey (this means that they test you to see if your qualify and if you don't they still pay you for your time).

I poked around the site and it seemed to be legit. I even did a few Google review searches. It seemed to check out so I decided to sign up - yes there is a 1 time registration process but no money or credit card info is needed.

Since signing up I have racked up some money. Right now I am at $56.10 and looking to get to $60 so I can "purchase" a years subscription to People magazine. I have purchased a year subscription of Sports Illustrator for my husband and a gift card to Macy's thus far.

Yes you have to fill out surveys that can take from 1 minute to 30 minutes at times (mostly they are 5-15 minutes for the longer ones). But hey if you have a lunch hour or just at home killing time while watching TV on the couch you can help out a company that needs research and data and get yourself a few things for basically free.

Here's some examples of what you can purchase from their rewards center: airline miles, rental car and hotel points, magazine subscriptions, gift cards to restaurants, clothing stores, iTunes, etc

I know with the holidays knocking on our doors this might be a great option to get someone a gift card or magazine subscription for the holidays.

Grilled Zucchini, Herbs & Feta Salad

I'm honestly not even sure where I picked this recipe up but it was a long time. It has become one of my favorites, especially during the summer. It's easy, yummy and typically I have all the ingredients for it. What's there not to love?!

It's also a great crowd pleaser when you have guests over - honestly it almost as simple as just grilling zucchini on the grill and throwing a hunk of it on their plates. It makes you look like you put a lot of thought into the meal and that you really know your stuff. We all love that!

Next time you grill out trust me try this as one of your sides!


Total Time:
Prep Time: 5 Minutes
Cook Time: Approximately 8-10 minutes
Total Time: 15 minute max

Feeds: Figure 1/2 a zucchini per person as a rule of thumb.

Ingredients:
*** NOTE: The best part about this recipe is there is no measuring! It's all about preference.
- Sliced in half longways zucchinis (1/2 per person at least)
- Crumbed Feta Cheese (I prefer the fat-free for this recipe and I like a lot of cheese)
- Dried Oregano
- Fresh Chopped Parsley 
- Salt & Pepper to taste
- Olive Oil

Directions:
1.) Slice the zucchini longways in half. drizzle some olive oil or spray some cooking spray on the flesh. Sprinkle with salt and pepper to taste.

2.) Grill the zucchini. Start with the flash side down first for approximately 4-5 minutes (depends on size of zucchinis). Flip over and finish cooking on skin side down. 

3.) While the zucchini is cooking mix the feta cheese, oregano and pepper in a bowl. 

4.) Pull the zucchini off the grill.


5.) Slice the zucchini into bite size pieces and add to the cheese mixture. Add in the fresh parsley and drizzle with olive oil.

6.) Mix it all together and serve! 


I went a tad heavy on the cheese this particular time but hey who doesn't love cheese?! I have also done this with basil instead of parsley or thyme instead of oregano too! It's soo easy and adaptable, it's a great recipe to have in your back-pocket to impress! ENJOY :)

Sausage, Peppers & Onions Stuffed Buns

Do you ever look in your refrigerator and wonder what can I make with what is in here? That happens all the time I feel like at my house. I do most of the cooking, but honestly I don't mind because I love cooking - both recipes I know I love but new ones that I just make up on the fly. This is one of those made-up on the fly recipes!

3 things drove this dinner recipe - 4 hotdog buns leftover from hotdogs on Saturday night and 7 sausage links with about 2/3 of a jar of marinara sauce left over from homemade pizza Sunday night.

I came home for lunch on Monday and looking in the fridge was trying to figure out what to make for dinner that night. A Sausage and peppers sub sounded great but on a small hotdog bun? Then it hit me - stuffed! I knew I had red and sweet onions, some mushrooms leftover from the pizza and dang it my peppers had gone bad. I got back to work and emailed the hubby who gets out before me to pick up a red and green bell pepper, parsley and an Italian cheese shredded blend.

Here it is - Sausage, Peppers & Onions Stuffed Buns

Total Time:
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40-50 minutes

Feeds: 4-6 people

Ingredients:
7 Sausage Links - I used both mild and sweet but whatever you have on hand will work
4-8  hoggie buns or hotdog buns (hoggie buns are better!)
1 Green Bell Pepper, sliced
1 Red Bell Pepper, sliced
1/2 Sweet Onion, sliced
1/2 Red Onion, sliced
1 cup Mushrooms, sliced
1  -2 tbsp Garlic, minced
1 - 2 cups Shredded Italian Blend Cheese (I prefer the low-fat version)
15-20 oz Pasta Red Sauce (I had about 2/3 left of a 24oz jar of marinara sauce in the fridge)
1/2 cup Red Wine (can use chicken broth/stock instead)
Fresh Parsley
Dried Oregano
Dried Basil
Dried Thyme
Garlic Salt
Onion Powder
Cayenne Powder
Ground Black Pepper
*** NOTE: the nice thing about this recipe is you can add more of or make less of something if you prefer, like less meat and more veggies.

Directions:
1.) Prepare all veggies - onions, peppers, mushrooms, garlic and parsley.

*** TIP: Chopping parsley easily like a pro! Break off a handful or whatever amount you need and put into a small bowl. Take a pair of scissors and using backwards (blades down instead of out) cut up parsley until desired rough or find chop. 


2.) Remove casings from sausage links and roughly chop the sausage.

***TIP: To remove sausage casing use a knife and make a shallow slice down the link. Then using your fingers peel away the casing.

3.) Heat up a small amount of olive oil in a pan over medium-high heat. I used a cast iron skillet but a non-stick 12" pan would work just as well.

*** TIP: If you use a cast iron skillet make sure you clean it right away once your finished. Use only water and a soft brush to remove food. Do Not use soap! Immediately dry with paper towels to avoid rusting. 

4.) Add the sausage to the pan to begin browning. Move it around a lot to break it up and give it an even browning.


5.) After about 2 minutes (sausage will not be all the way browned) add the peppers, onions and mushrooms. Continue to stir around, breaking up chunks of sausage and browning both the meat and veggies. Cook until veggies are tender, approximately 10 minutes depending on how hot your pan is. I prefer cooking this slower, closer to 10-15 minutes because nothing will burn and everything will become "happy".

6.) Drain the fat/oils from the pan.

***TIP: To Drain the fat, move all the meat and veggies to 1 side of the pan and then slightly tip the pan with the food at the top so the fat runs to the open spot. I use a kitchen spoon and ladle out the fat into a tin can I keep in the fridge. DO NOT throw it down the drain unless you want a huge mess later on.  

7.) Add the dried spices and fresh garlic and mix in. I did about a 1/2 tbsp for each herb - basically a decent pinch of each and a few cracks around the pepper mill  for the pepper.  Cook for 2-3 minutes.

8.) Add in red wine or chicken broth and let it reduce by half. Remember to use a wooden spoon here to scrape the bottom of the an for any brown yummy pieces that developed during cooking.

***TIP: Don't forget to pour yourself a glass of wine too!

9.) Add in the pasta sauce. Cook for about 1 minute - really you are just heating up the sauce. Turn your broiler on low.

10.) Remove pan from the heat and add and mix in the parsley.

11.) Place buns in an broiler safe pan and spoon sausage and veggie mixture into buns. (ps -I still had plenty of mixture leftover after filling this 4 hotdog buns that we filled 2 hoogies for dinner the next night!)

12.) Give each bun a good sprinkle of cheese.

13.) Place pan, uncovered under broiler -you are looking for a nice browning, maybe 2-4 minutes.

***TIP: Be careful and keep a watchful eye on food when using the broiler - things can go from perfect to burnt in a blink of an eye! 


14.) Serve and Enjoy! I topped mine with a light sprinkle of fresh parsley. I highly suggest a fork and knife for these bad boys - they are messy!




Cost Breakdown:
Unfortunately I can not find the receipts from different purchases to make up this meal. The next trip to Publix I will make note of prices and update. However doing some quick math in my head of what I think the prices were - it was somewhere in the neighborhood of $17.00 total which is around $4.25 per person at 4 servings and $2.83 per person at 6 servings. Not to shabby!

Let's Talk Coupons - It's Not Scary I Promise!

COUPONING - this is typically a subject that you either like or don't care about one bit. I myself coupon but am definitely not a crazy couponer. I go through spurts where I do a really good job and then don't touch it for a while.

Lately I have been good about cutting them but terrible about using them. Plus my company removed things from people's computer's (ex: Coupon Printer) and has blocked downloading period  - boo! No more printing coupons at work - which I must say I know I shouldn't do anyway. I better go buy more ink for my printer at home.

I have a coupon purse that I have been using for at least the last year. It replaced the clunky plastic accordion one I had. It stays in my purse at all times - BUT - I forget it's there at times, put in the coupons I clip in it, oh and take out the expired ones too. I know I know shame on me.

My thought - There HAS TO BE a better way out there but I also don't want to spend a lot of time nor money on making this better. So I hopped onto Pinterest and searched "organizing coupons" - come on you know that's a place you search for ideas too!

I came across a Pin showing a coupon binder that was super cute. Clicking on the Pin it brought me to a blog - IHeart Organization  (crazy cute blog by the way with some great tips and ideas - check it out under my tab of "Blogs To Check Out"). The pin though was actually a featured post from another blog - Raising up Rubies.

Raising up Rubies makes some great points on how to utilize the binder to it's fullest. Also she lets you download the very cute coupon category dividers for free! Click Here to download them!

So the next thing I did was find an old binder I didn't need anymore, bought some durable post-it tabs, ordered some 9-pocket baseball card sleeves, pulled out my label maker and printed off the coupon category dividers on some card-stock.

Originally I put the dividers in the 3 hole punch, inserted the baseball card sleeves and put the tabs on the dividers. I quickly realized the baseball sleeves were bigger than the dividers and I could barely find the tabs - NOT going to work!

To fix this, I went and found some old sheet protector sleeves I knew I had laying around somewhere and put the dividers into the sleeves and replied the tabs - WALA worked perfectly.

Then I had a thought - these tabs are in 4 different colors - color coordinating!

  • Blue = cold foods (yogurt, produce, dairy, etc)
  • Green = all other foods (soups, snacks, pasta, etc)
  • Yellow = beauty & health (oral care, hair care, band-aids, etc)
  • Red = all other products (cleaning supplies, batteries, Ziploc bags, etc)
Next I switched out the tape in my label maker to black ink on white labels since it will work with the tabs and I use that one less - clear tape is my preferred tape! Printed everything out, cut everything to size and applied to the corresponding colored tab. Did I mention I also alphabetized the tabs too!



This past weekend I took my binder to the grocery store for the 1st time. I did feel a bit dorky bringing a binder into the store and I'm sure people thought I was "one-of-those crazy couponing people". It made it easy to look for what I needed so honestly I didn't care about what others thought. The best part was either did my husband and he was with me! 

The next steps with my couponing is to be better about planning - reading the sales flyers at the different stores each week and utilizing my coupons to their fullest capacity! But hey for now it's cute and when I like something I will definitely use it more! SCORE!

PS - The baseball sleeves are great! 1 coupon per sleeve and it's all organized. You can see what you have and when they expire easily. The only con I can find is you really can't utilize both sides of the sleeve because it becomes hard to read with a coupon on both sides. However I had the idea of using index cards (I think the big ones cut in half will work perfectly) and inserting them into each pocket that way I can use less sleeves = less pages! This will be phase 2 since I don't have enough coupons yet to use more than one side of one sleeve per category yet.

Won NFL Season Tickets off Radio Station!

I have NEVER won anything in my life and this past Friday I received a phone call from a local radio station - 95.1 WAPE Jacksonville's #1 Hit Music Station  - an employee from promotion was on the other end and told me that the season tickets I had registered for online I WON!!!

Okay so they were nose bleed tickets to the Jacksonville Jaguars, definitely not my or our favorite team BUT they are FREE NFL season tickets that get us inside the stadium and we've discussed I love football and so does my husband so we couldn't be happier!

THERE'S A LESSON HERE - register for events on radio stations!

My sister has won probably 6 different pairs of concert tickets over the last year and the 1st time I register I win season tickets! Hello and Thank You!

When I called my husband to tell him the good news the 1st words out of his mouth are "Do they come with parking tickets?" LOL! He was excited though.

Friday Night - We went and saw our dads' favorite team the Miami Dolphins (yes they both grew-up and love the Dolphins) play the Jacksonville Jaguars. A great plus is one of my really awesome friends in Jacksonville that I don't get to see too often has season tickets too and we can tailgate with them now! YAY!

We also got a free $10 voucher towards the concession stands for each game in the ticket's packet I won. Yes that get us about 3/4 of a beer BUT hey it's $10 in our pockets that we didn't have before! We actually decided to use it towards dinner on Friday and got Sonny's BBQ pork sandwiches for $8 each, a bag of chips for $2 and then a really nice guy in front of us in line gave us 2 free coke vouchers so dinner was $8! That plus $10 parking - talk about a cheap Friday night at an NFL game = $18.00 total!!! Whoop!


Like I said - definite nose-bleed seats but honestly it wasn't that bad. You could still see pretty well and it was a gorgeous evening too so it was nice to experience that too. We ended up going down and sitting with my friend because there was a bunch of open seats and they were on the 200 deck and we were on the 400, but honestly they are right by the stairs at the bottom and anytime anyone got up and were walking down the steps they got in your way - so it's a toss up on which seats are better! lol!

As I stated last week on Thursday - I am a Titan's fan and my husband is a Green Bay Packers fan which I'm converting to too - (Click Here to find out which teams we are fans of!). However, we decided that if we were going to go to he Jags game all season we would at least cheer for our hometown team (however, the Titan's game I will be decked out in my Tennessee colors and screaming for them!) Notice I didn't say we would be a fan but instead cheer for the team. Therefore, I stopped by Dicks Sporting Goods on the way home from picking up the tickets with intentions to buy us t-shirts, but they had last year's jerseys on sale for 75% off and cheaper than t-shirts - okay we got jerseys - I'm all about a good deal and sale! At least we looked all official. :)


Definitely looking forward to football even more this season!!!

Fall = Football & IT'S HERE!!!

Okay 2 sports posts in a row - I know but come on my favorite time of the year is here finally - Football Season!! August to me means 1 thing - football is back THANK YOU GOD!

First and for most I LOVE college ball and it's definitely my favorite but I love the NFL too. A few points you have to know about me first:
  1. I grew up a Tennessee Volunteers and Titan's fan living just outside Nashville, Tennessee.
  2. I became an Aggie fan when I went to school & swam for Texas A&M and will always bleed maroon till the day I die!
    • I still cheer for my Vols but my Aggies come 1st now!
  3. I also recently became a Green Bay Packers fan too because my hubby is a die-heart Packers fan and we made a deal on how to raise our future kids one day as sports fans:
    • NCAA - Texas A&M Aggies
      • I had to give up my Volunteers and he had to give up his Gators (almost didn't want to meet him because of this 1 fact!)
    • NFL - Green Bay Packers
      • I had to give up my Titans
    • NBA - Milwaukee Bucks
      • I didn't have a team so he won this one
    • MLB - Milwaukee Brewers
      • I didn't have a team and my husband is a die-heart fan here too
    • Him getting the majority was the ONLY way my Aggies would be the NCAA team - giving up his Gators in terms of pushing on the kids was  HUGE ticket item! 
    Okay now that you have my background of teams - it's official, FOOTBALL IS BACK! This past Sunday was the 1st NFL preseason game with the Cowboys defeating the Dolphins and this weekend the NFL really kicks off it's preseason starting TODAY with my Titans hosting the Reskins (shh don't tell John!). Thank you God there will be football on my TV again all weekend long starting tonight!

    You know what is great too about football being back on TV - the social events around it too! Having friends over, going to their place, meeting people at sports bars, etc! I LOVE this time of year and I know most people do too. I can't wait for football to really swing back into gear!

    Johnny Manziel - An Aggie, NOT a representative of all Aggies!

    I guess it's time I voice my opinion on Johnny Manziel/Football. I am hearing it from everyone lately since I am an Aggie. I've attempted to stay quiet but I am going to get up on a soap box for a second and then be done with it (hopefully!).

    Last year was a blast for Aggie Football - a first in a very long time! I hardly threw anything at the TV! - especially when my undergrad years were the Dennis Franchione years and then grad school were the Mike Sherman years - OUCH!  We weren't too sure going into the 2012 season with a new coach & staff, a new quarterback, & a new conference how the Aggies would do. It was going to go 1 of 2 ways - the way it did (thank God!) or well let's face it, the season Missouri had in the SEC. Thankfully it was a season I was proud of, and many many Aggies everywhere were too!

    Let me tell you the night the Aggies beat Bama, I lost count of the shots and drinks consumed celebrating! The only thing that could have been better was to be actually celebrating in College Station on North Gate.

    However, since that wonderful season there have been A LOT (major understatement) of media attention around Johnny and none of it has been positive - with the exception of winning the Heisman trophy which was awesome. To his defense but not making excuses, no other Heisman winner has been this young (bringing immaturity) and had to deal with social media in this capacity. In today's world you know exactly what is going on with someone the moment it happens. Sometimes they post it themselves but with everyone having a smartphone with a camera, it allows anyone to post anything instantaneously and typically it's the posts you don't want to share. This explosion of social media and the way the world uses and utilizes it can be a recipe for disaster and boy has this gotten him in trouble too!

    Here's my soap box - This 20 year old doesn't realize (at least I believe he doesn't by his actions) that he is not just representing himself and even the Aggie Football team, BUT he is representing the entire Texas A&M university, current students, facility and alumni in the eyes of the media & outsiders perspectives. The key here is the media & perspectives -  trust me he is an Aggie and bleeds maroon but he does not represent all Aggies as in who Aggies are; but currently he is the face of Texas A&M and that is a bit concerning to me. I wish him all the luck in the world and hope everything turns out for him, but currently he needs to grow up a bit faster than many 20 year olds do and realize that he's in the public eye now and there is nothing he can do about it!

    Johnny Manziel is a household name now and the crazy thing is a year ago no one knew who he was, even in the state of Texas. Can you imagine being a 20 year old male college student and all this happening to you in less than a year?! I know I can't nor would I want all this to happen to me. Part of me wonders if he came along with the same football circumstances 10 years ago, would he get into the same media trouble?

    My answer is NO solely based on social media. I'm not saying he would magically be an angel, but the total severity, the overall media trouble would decrease in my opinion solely due to less public exposure. I'm not sure by how much, but think of this:

    •  Facebook launched on February 4, 2004 and it was only available to people with a registered college email address, in September 2005 high school students were added but it wasn't until September 2006 that it was opened to everyone. (source)
    • Twitter launched on July 15, 2006, had only 400,00 tweets per quarter in 2007, grew to 50 million per day in 2010 and in December 2012 Twitter reported it had 200 million monthly active users (source)
    • Instagram didn't launch until October 2010 and rose quickly to 1 million users by December 2010 but didn't reach 100 million user until April 2012, the same time frame that Facebook bought Instagram, and in February 2013 it announced it had 100 million monthly active users. (source)
    How times have changed in just 10, even 5 short years! 

    Overall I am tired of the text messages and comments people are making because I am an Aggie - "You better have your second string QB start warming up", "Why can't your QB wake up on time?", "Looks like your QB doesn't like A&M and wants to leave", and some of my favorites and probably the ones that upset me off the most, "Some school you've got letting him run around like that" or "Texas A&M allows their athletes to just do whatever they want don't they?!" This is what I mean - I am now directly associated to him because we are both Aggies, he is becoming the persona of an Aggie which is not true and I know first hand being a former Aggie Athlete that it's a well-rounded program that cares about it's athletes and does everything they can to help them succeed, however, they can't be the kid's parents too!

    I've been trying to just stay oblivious to all of it because I don't want to get sucked in but lately it has been staring me in the face. The new Sports Illustrated just landed in my mailbox and who was on it - Johnny Football. I cant get away from it.



    Lately I've read 3 articles that I thought are worth sharing:

    1.) My husband emailed this to me with the subject line "Too Funny!" Click here to read the article. It's a fictional piece predicting the 2014 season based on his actions thus far. I pray that we don't lose to Ole Miss like this states but it has us beating Bama again and Florida in the SEC champs so I'll take that! It just speaks to what I have said, the kid doesn't realize that he represents so much more!

    2.) I saw this shared on a friend's facebook wall. It's from ESPN and it appears it's a piece that was written speaking to Johnny's parents. I think it was suppose to help or maybe even be a cry out to Johnny but honestly I think it makes him look worse sadly. Click here to read it.

    3.) Finally the S.I. article was actually decent. It was mostly unbiased and just laid out facts. There was some "explaining" on why Johnny has acted the way he has but there was some straight up call outs. I've yet to read any reviews on the article (a.k.a - www.texags.com) because I'm sure there is comments but my opinion was good article. Click here for the article


    Wrapping up, I am hoping that the 2013 season just starts and he can focus on school and football - put a ball back in the kid's hands please!!! I understand he is a 20 year old and needs to have a life, but at this point he has been labeled "trouble" by the media so that's all they are going to report on him - sadly. Hopefully he will realize this and keep things on a lower key because no matter how much he wants it, a normal life isn't possible for him right now.  IDEA - Maybe he could volunteer more! I was the chair for a group called A.A.I. (Aggie Athletes Involved) while I was at A&M and I think this would be a great place for him to channel some energy. Maybe give himself some good PR but also for the group as well. Just a thought. :)

    All in all - Gig 'Em Ags and let's BTHO of Bama again!! WHOOP!

    My Solution to Drowning in Spices

    The 1st step in identifying you have a problem is admitting to the problem - we've all heard this SOO:

    Hello, my name is Meghan and I have a problem - I LOVE spices and have too many and it's a COMPLETE MESS! 

    Okay I feel better. But honestly I have entirely too many spices. Last summer when I moved out of my apartment with my sister I filled an entire canvas bag from an entire little, 2- shelf cabinet I filled with spices at our apartment.

    When I moved in with my brother-in-law I kept them in the canvas bag and only brought out ones when I needed them as they already had a bunch there. I was embarrassed actually by how many I had and didn't want him to think I was was the future crazy sister-in-law! lol!

    Then my husband and I moved into our new place and I had to use all of my spices again. Problem - no where to put them by the cooking area. So the spices continued to sit in the canvas bag - taking out a few and cluttering up near the stove. This was not going to work!

    Then a picture from pinterest popped into my head - magnetic tins on a medal board inside a cabinet (from Redesigned by M). I could do this but on my fridge!  So I started shopping online -WOW these things aren't cheap!

    Then I found some at IKEA in 4oz tins (finally a decent size and not these tiny 2 oz things I was seeing) that were $4.99 for a set of 3. Still not super cheap but the best I was able to find. I knew I was going to IKEA in 2 weeks, I mean I had gone a year with the canvas bag, what's 2 more weeks?

    ***NOTE: I went to find these online - Grundtal Containers - and they were $7.99 for a set of 3. I checked my receipt and I paid $4.99. I do remember seeing both prices at IKEA and took from the cheaper marked ones. Not sure if these are going up because they are becoming more popular. 

    6 sets came home with us (probably should have gotten 8 now but hey 18 total tins is still great!)

    I pulled out my label maker and dumped in the spices - okay first off I have to mention that I went through them and threw A LOT away that was expired as you can probably image but that's okay, I had too many to begin with. Plus if I haven't used it in a year do I need it? It's like the closet cleaning out rule (if you haven't heard of it trust me it will be a post I am sure in the future, stay tuned!)

    Today I have what I call "Kitchen Art" on my fridge - my Spice Tins are all neat, in alphabetical order and labeled. It's soo easy to find the spices that I use all the time right next to the stove. It's not only handy but pretty to look at too! The others (because you know 18 spices didn't fill up a canvas bag) are neatly in the pantry on a lazy-susan to have better access.



    Everyone that has been over to my house since I have completed it has committed on it - which makes me feel great I can't help it!

    Baked Chicken with Mushroom, Onion Gravy

    This week I was craving a dish I haven't had in years, maybe even a decade, that my mom use to make all the time when we were kids.

    I wasn't even sure what it was called but it's a baked gravy chicken. So I picked up the phone and called my mom - the Queen B of cooking in my book!!! She knew what I was talking about and told me how to make it and let me tell you - OMG SIMPLE! I stopped by the grocery and picked up the 3 items I needed that night to make it this dish. Super cheap too!

    I am sure you can find very similar if not this exact recipe somewhere on the web or in a recipe book. I am no way taking credit for it as my own, but definitely wanted to share it. Plus I thought - What a GREAT recipe to by my 1st blog recipe, one from my childhood that I still love today!

    So I am calling this Baked Chicken with Mushroom, Onion Gravy - YUMMY!




    Total Time:
    Prep Time: 5 minutes (seriously! - but might need more time if your oven is slow to heat up)
    Cook Time: 50 minutes
    Total Time: 55 minutes

    Ingredients:
    4 Boneless Chicken Breasts (you can use bone-in but definitely add more time in the oven)
    1 can (10.75 oz) Campbells Cream of Mushroom (generic would be fine too!)
    1 can (10.75 oz) Campbell's Cream of Chicken (generic would be fine too!)
    1 packet Lipton's Recipe Secrets Onion Soup & Dip Mix (generic would be fine too!)
    salt, pepper, & dried oregano to taste

    Directions:
    Pre-heat oven to 350 degrees.

    Place chicken breasts into an oven safe casserole dish. Sprinkle with salt, pepper and oregano to taste. (I added the oregano from what my mom told me - I am a HUGE herbs fan and decided that it needed it!)

    In a bowl combine the cream of mushroom, cream of chicken and packet of the onion soup & dip mix. Pour mushroom, onion gravy mixture over chicken and then spread evenly across all chicken breasts.

    ***Sorry for the shadows - I'm new to all of this so definitely still learning BUT I promise they will get better!

    Cover with aluminum foil (or a lid if your dish has one) and put into oven for 30 minutes. After 30 minutes remove foil (or lid) and cook for an additional 20 minutes.

    Bring out of oven and let it sit for a few minutes so the gravy can set just a bit.

    Then serve with 2 of your favorite sides - I went with a red potato mash and sauteed zucchini. Don't forget to ladle some of the AWESOME gravy onto the chicken. Not to mention mixing it in with the mash potatoes - hello YUMMY!

    Talk about a super cheap meal for 4 people! I try to take advantage of great sales like BOGO chicken breasts and just freeze them individually so I can take out as many as I need. We just moved so I got lucky on the soups being on sale but normally when those go on sale and I stock up with a coupon too so this could have been even cheaper with a bit more planning.

    Side Note - These chicken breasts were so big that it's actually going to feed 5 people - 3 of us ate last night and then me and my husband are having leftovers! :) That makes the price per person $1.78 - WHOOP!

    Bar Makeover Costs

    On July 23rd I revealed our very first DIY furniture makeover - Our New Bar! (If you missed it you can see all our steps by Clicking Here.) I couldn't believe how many views I received that day - I've had a blog before but have NEVER had stats like that before. I was super stoked!
